Sopapilla Cheesecake Bars

Ingredients

2 cans Pillsbury crescent rolls

16 ozs Neufchatel cheese or cream cheese softened

1 cup sugar

1 tsp vanilla

1/3 cup butter melted

1/2 cup sugar

1 Tbsp cinnamon

Directions

Preheat oven to 350 degrees.

Unroll 1 can crescent roll dough & lay flat in the bottom of a 9x13 baking dish. Stretch the rolls to cover the bottom of the pan. Pinch any seams closed.

In a mixing bowl combine cheese, 1 cup sugar & vanilla. Beat until smooth and fluffy.

Spread the cheese mixture evenly over the top of the dough.
Unroll the remaining can of dough & lay this on top of the cheese mixture, pinching closed any open seams.

Pour melted butter soon top of the dough.

In a bowl mix the remaining sugar & tablespoon cinnamon together & sprinkle evenly over the top.

Bake for 25-30 minutes until is golden brown.
Let cool for approximately 20 minutes and chill completely before cutting into squares.

Serve cold, or warm up individual slices for 10 seconds in the microwave.
